This is a more of a hearty stew/soup. Very tasty.
A Healthy and tasty soup with spaghetti.
Easy to cook, delight to eat.
Ingredients
- 1 Cup Dry Lentils
- 1 Large Onion Minced
- 2 Carrots Diced
- 2 Celery Ribs Sliced
- 6 Large Garlic Cloves Minced
- 2 Cups Tomato Puree Canned chopped
- 4 Ounced Sphaghetti Broken into 2 Inch Length
- 2 Cups Spinach Sliced
- 1/4 Cup Ekin Olive Oil
- Salt & Pepper As per Taste

Instructions
- Place everything except for spaghetti and spinach in a large kettle with 2 quarts of water; bring to a boil.
- Cover and simmer 1 hour.
- Add seasonings, spaghetti and spinach.
- Simmer 10 - 12 minutes until spaghetti in tender.
- Drain.
- Add a small drizzle of olive oil to each bowl when serving.
